Established in 2021, the Pillars of the Community campaign aims to shine a spotlight on the unsung heroes and cornerstones of our local community. Our streets are filled with organisations that strive to provide positive contributions to their local areas, and make up the essential fabric of our communities. We aim to shine our Pillars of the Community spotlight upon the longstanding institutions, beloved businesses and outstanding charities that fill East London, and beyond.
 
 
For this edition of PotC we chatted with Dan Birch, the founder and director of the iconic Sodo Pizza restaurants. 
 
 
Sodo Pizza has a collection of six outstanding London-based sourdough pizza restaurants, serving natural wine, craft beer and sustainable produce. It all began with a pop-up in 2011, and you can now find Sodo in Clapton, Bethnal Green, Deptford, Hoxton, Hammersmith, and Walthamstow. The team sources the freshest seasonal toppings from local producers, and mills heritage wheat flour onsite. The sourdough is made using a 200-year old starter and fermented for 48 hours before cooking, all contributing to a very special pizza experience. 
 
Who are Pillars:
 
Pillars Brewery is a specialist craft lager brewery based in Walthamstow, the first of its kind in London. The brewery was established in 2016 by a team of family and close friends, driven by a mutual adoration of lager. Pillars lovingly brew some of the UK’s best lager and have won over 20 awards in the last three years alone. The brewery has undertaken multiple expansions, runs a taproom onsite and hosts a bar at CRATE St James Street. They continue to bring people together with exceptional lagers. Pillars is more than just an East London brewery: It’s a community.
